Asian Sweet Potato Noodle Bowl

I love finding unique ways to substitute noodles. One of my favorites is sweet potato noodles. I use a hand spiralizer to turn sweet potatoes into noodles and then either bake or sauté them until soft. They are a great, healthy alternative to pasta and have an amazing texture! 

Serves 4

Ingredients

  • about 1 cup asian almond butter sauce 

  • 2 medium sweet potatoes, spiralized 

  • 1 mango, peeled and julienned 

  •  1 red pepper, peeled and julianned 

  • 1/2 bunch green onions, sliced thin

  • 1/2 cup cilantro leaves (or 1/4 cup roughly chopped cilantro) + more for garnishing

  • black sesame seeds to garnish

  • limes to garnish

Directions

  1. Heat 1 TBS coconut or avocado oil in a pan over medium-high heat. Add sweet potato noodles and sauté until tender, about 10 minutes. Take off heat and set aside.

  3. Once the sweet potatoes have cooled add everything to a bowl and toss with almond butter sauce to coat. Garnish with cilantro, black sesame seeds and lime wedges.
