Avocado Green Goddess Dressing

 

Creamy, garlicky, lemony, deliciousness. I love this dressing because it gets all of its creaminess from the avocados! Perfect for a salad, on sandwiches, or in wraps. Avocados take the place of sour cream or mayo in this recipe, making it a healthy alternative without sacrificing any flavor. 

Ingredients

  • 1/2 bunch green onions, chopped
  • 4-5 garlic cloves
  • 1/2 cup fresh basil leaves
  • 1/2 cup fresh parsley leaves
  • 2 ripe avocados 
  • Juice from 1 lemon
  • 1/4 cup rice wine vinegar 
  • 1/2 cup olive oil 
  • 1 tsp dijon mustard 
  • 1 tsp salt 
  • Freshly ground black pepper

Directions

  1. Place all ingredients in a food processor or blender and blend until smooth, scraping down sides with a spatula as needed. Season with additional salt, pepper, or lemon juice to taste.
